Pineapple cake with pineapple glaze icing is so easy to make.

To prepare Pineapple glaze icing, slice a thick layer of the outer hard skin of the pineapple. Slice and chop removing the center hard part of it. Transfer the chopped pieces into a grinder jar and make a fine paste out of it. Cook 3 cups of pineapple paste mixed with 1/2 a cup of sugar in slow to medium flame by frequent stirring for 10 to 15 minutes or until the consistency slightly thickens and once done keep aside to cool completely before pouring on top of the cake. To prepare the cake we need to beat 6 tablespoons of butter with 1/2 a cup of sugar until turns light and fluffy with the help of a hand beater. Into it then add vanilla essence 1 teaspoon, crack 2 large eggs, and beat nicely. Once mixed well, start adding the flour gradually and mix. All-purpose flour used is 1 cup. Also, add 1 teaspoon of baking powder and mix along with the flour. Start adding 1 cup of milk gradually along with the flour and keep mixing to prepare a smooth and soft cake mixture. Lastly added 1/2 cup of more milk to help bake it flat. Also, add a teaspoon of distilled vinegar and give it a mix. Grease the pan (8 in x 6 in) with butter and pour the batter. Bake in a preheated oven at 350 degrees Fahrenheit for 36-40 minutes. Take it out and let it cool completely. Once cold, poke all over the cake using a fork and slice these keeping them in the same container so that once done with icing and decorating it's easier to pull it out. Next, pour out the pineapple glaze on top of it and spread evenly using a spatula. Decorate with whipped cream, some cooked or canned pineapple pieces, and holiday cherries on the top.
