Ground turkey soup recipe with Red Malabar spinach ~
I am using Red Malabar spinach to prepare this delicious soup. To start with the recipe heat up some olive oil and cook ground turkey well before adding it to the soup.
Stir and fry a ground turkey in the oil until starts to release water and the meat turns white from pink. Gradually all the water disappears and the cooked turkey releases a nice aroma. That’s when you need to stop further cooking this and keep it aside for later use.
In a large container heat some regular oil. Saute one medium-sized onion chopped into the oil until translucent. Next, add in some grated or finely chopped garlic and saute some time. Now add red chili powder, and some freshly crushed black pepper powder, and give it a mix. Next, add some cumin powder and give it a quick mix.
Next, add 2 ripe medium-sized tomatoes finely chopped. Stir and cook for about a minute. Sprinkle some salt as required and then add washed and chopped red Malabar spinach into it. Along with this add the cooked ground turkey that we kept aside, and 2 bay leaves. Into it immediately pour hot water of around 4 to 5 cups along with the vegetable broth. I have added a vegetable broth of around 3 cups. You may distribute the amount of water and the broth equally as well.
Mix and let these nicely boil and simmer in slow flame for about 15 to 20 minutes. Cover and cook until everything nicely softens and is nicely cooked.
Uncover, and check in between. Give it a stir and cover and cook again if required.
Serve hot and enjoy this delicious healthy soup with your favorite siders.
