Cabbage and pineapple fried rice

Cabbage and Pineapple fried rice. Quick and Healthy Vegetarian fried rice recipe. Super tasty.

Into a wok heat some butter. Once the butter is heated add some chopped green chili and thinly sliced garlic and sauté them. The nice aroma starts to come. Then add ginger and garlic paste and stir. Immediately add finely chopped cabbage and crushed black pepper 1/2 teaspoon and give it a quick mix. Immediately then add chopped onions into it and give it a quick sauté. Then by adding some red chili powder fry them for about a minute. The texture changes a little bit. At this point add colorful bell peppers 🫑 and sauté for about a minute.
Next add the chopped pineapples, few raw cashews, a teaspoon of sesame seeds, and by sprinkling some salt fry these for about 2 minutes. Well, do not overcook the bell peppers
Now add cooked and cold rice into it and mix. Choose long grain nonsticky rice 🍚 preferably basmati rice to prepare this for best results. Mix and cook the rice on medium to high flame well, along with the other ingredients for some time.
At the end add some soy sauce and sauté for 2 minutes. Mixing and frying the rice with soy sauce at the end enhances the taste and flavor of the fried rice. It smells good just like in the restaurants :) Serve and enjoy hot.

Ingredients
  

  • 2 cups Cooked and Cold rice preferably long grain non-sticky basmati rice
  • 2 tablespoons Butter or oil
  • 1 cup Cbbage, finely chopped
  • 3/4 cup Pineapples (chopped or cut into pieces)
  • 5 Garlic cloves
  • 1/3 cup Onion chopped
  • 1 Green chili chopped
  • 1/2 teaspoon Red chili powder
  • 1/2 teaspoon Crushed black pepper
  • Sprinkle some Salt
  • 1 and 1/2 tablespoon Dark soy sauce
  • Red bell pepper half cut into pieces
  • Green bell pepper half cut into pieces
  • 7-8 Cashews raw
  • 1 teaspoon Sesame seeds

Note- Points to remember
  1. Do not overcook the bell peppers
  2. Little less cooked rice works great for frying or preparing fried rice.
  3. Use any long-grain, nonsticky rice for eg good quality basmati rice for best results.
