Pineapple and sooji halwa

Pineapple and Sooji Halwa sweet

Finely chop a juicy and fresh pineapple and cook these in water and sugar syrup until softened. Once done keep these aside. Into a hot saucepan add ghee I.e clarified butter and mix Sooji i.e semolina to it. Stir continuously and fry semolina I.e Sooji in at the lowest flame for about 3 to 4 minutes. You may notice a slight change in the texture of the Sooji appears and it turns aromatic within few minutes. Do not overcook semolina to avoid burning. Once these turns aromatic add the cooked pineapples along with the syrup and quickly mix. Very quickly the syrup gets soaked by the semolina. At this point immediately add water 1 cup to it and mix. Also, add some extra ghee and sugar as required, as per taste and mix. Cook for another 4 to 5 minutes and it’s done.
Immediately transfer into a large container to set. Use a spatula or a spoon to level these up and allow them to set. Sprinkle toasted ground pistachios and almonds (slightly salty) or any other dry nuts of choice. Preferably choose the toasted ones because these are slightly salty which adds up flavor to the sweets for sure:)

Ingredients
  

For Pineapple Syrup we need

  • 1 bowl (2 cups) Pineapples finely chopped
  • Little less than a 1/2 bowl Sugar
  • 2 Cups Water

For Halwa mixing

  • 1 cup Semolina (sooji)
  • 1 cup Water
  • 1/3 CUP + 3 TABLESPOONS Clarified butter (GHEE)
  • 1/2 cup Almond flour
  • 3 Tablespoons Extra sugar or as required
  • 1/2 Teaspoon Cardamom powder
